You rush Chivalry. You build 5-6 Keshiks and one melee unit (to capture the city). You then erase every civilization on your continent before they reach the Renaissance. The AI literally cannot counter a unit that shoots and runs away. For pure, unadulterated, medieval blitzkrieg, the Mongols are the best.
